The Cheesy, Hearty Breakfast Bake Everyone Asks Me to Bring

What Is This Dish?
This Sausage Hashbrown Casserole is a delicious and filling breakfast or brunch dish. It’s made with crispy hash browns, savory sausage, melted cheese, and a fluffy egg mixture. Everything bakes together into a golden, cheesy meal that’s perfect for feeding a crowd.

Ingredients You’ll Need
To make this casserole, gather:

  • 2 pounds frozen hash browns

  • 2 pounds ground sausage (cooked)

  • 2 cups shredded cheddar cheese

  • 2 cups milk

  • 9 large eggs (whisked)

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • 1 small can diced green chiles

  • Salt & pepper (to taste)

  • A little oil (for cooking)

Preheat & Cook the Sausage
First, preheat your oven to 350°F (175°C). Then, cook the sausage in a skillet over medium heat until browned. Once done, set it aside.

Brown the Hash Browns
Using the same skillet, add a little oil and lightly brown the frozen hash browns. This step adds extra crispiness to the dish.

Layer the Casserole
Grease a 9×13-inch baking dish. Spread the hash browns on the bottom, then add the cooked sausage on top. Next, sprinkle shredded cheese and diced green chiles over the sausage.

Prepare the Egg Mixture
In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper. Pour this mixture evenly over the layers in the baking dish.

Bake to Perfection
Bake the casserole uncovered for 35-45 minutes, or until the eggs are fully set and the top is golden brown.

Serve & Enjoy!
